Anti-Inflammatory Coconut and Sweet Potato Muffins with Ginger, Cinnamon and Maple Syrup

The muffins make a great quick breakfast or snack, a side bread with a meal or brunch, or a lunchbox treat. All people love muffins, which can be prepared in different ways. Today, we are suggesting a recipe for an incredibly delicious, and anti-inflammatory muffins, full of antioxidants!

The main ingredients in these muffins are coconut, sweet potato, ginger, cinnamon, and maple syrup. The sweet potatoes are highly beneficial for your health, as their flesh is rich in beta-carotene, which destroys free radicals in the body. The high amount of nutrients in the sweet potatoes help, also to prevent acute and chronic inflammation.

Here are the instructions on how to prepare these anti-inflammatory muffins:

Ingredients:

–           1 small organic sweet potato,

–           3 organic free-range eggs, lightly beaten

–           ¾ cup of organic canned coconut milk

–           ¼ cup of organic coconut flour

–           1 cup of organic brown rice flour

–           1 tablespoon of ground cinnamon

–           ½ cup of pure organic maple syrup

–           ⅛ teaspoon of ground cloves

–           ½ teaspoon pink Himalayan salt

–           1 tablespoon baking powder

–           1 teaspoon of ground ginger

–           2 tablespoons of organic olive oil

–           ⅛ teaspoon of ground nutmeg

Method of preparation:

1)         Preheat the oven to 400 degrees Fahrenheit,

2)         Oil the muffin tray

3)         Poke holes in the sweet potato, and put it on the middle rack

4)         Cook the potato for an hour

5)         Remove the sweet potato from the oven and leave it to cool

6)         Remove the skin from the potato

7)         Add the almond milk, maple syrup, and olive oil to the sweet potato, and mix all of them until you get a homogeneous mixture

8)         Mix the dry ingredients in another bowl, and then mix them to others and stir them all again

9)         Pour the mixture into the muffin tins, until they are ⅔ full,

10)       Cook the muffins on the middle rack in the oven for 30-35 minutes
